Great Pancake Recipes

Every Friday night, we have pancakes. My kids absolutely love them, I think because we have different pancakes every few Fridays. It’s easy to do, and makes really good memories. Here’s what I do:

First about a half an hour before I want to start cooking, I put my metal mixing bowl inside the freezer. It just makes the pancakes come out better.

Basic recipe:

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla

I like to use a mixer, but you could use a hand whisk if you would like.

Procedure:

Combine all the wet ingredients until smooth, then add the powdered milk and mix until smooth.

Now, under the mixer, have the Bisquick and set your mixer on stir or mix. Add the wet ingredients. Don’t just dump them in, but do add at a smart pace. Scrape often.

While you are doing this, start to heat your frying pan or griddle. I always add a bit of olive oil, even if the pan is non-stick. I usually use the 6 setting, you want it hot , but not searing.

I usually use a 1/4 to 1/2 cup measuring cup to measure out my pancake batter. You can make the pancakes more fluffy using less water, but remember that they need a little more cooking time.

Now my variations:

2 cups of Bisquick

1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla
1/4 cup of brown sugar, not tightly packed

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla, or cinnamon extract or apple extract
1/8 cup of white sugar
1 tsp of cinnamon
one peeled, cored apple – diced add this after you have mixed up the batter. Just fold it in evenly.

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla
1/2 cup of mini chocolate chips. Fold into the batter. You may use the regular sized chips, BUT they do tend to leave pockets of hot chocolate which could be dangerous for younger children to eat.

2 cups of Bisquick
1 cup of flaked coconut
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla
You can also choose to fold in 1/2 cup of mini-chocolate chips

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla
1/4 to 1/3 cup of sugar
1/4 cup of unsweetened powdered cocoa

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla

2 cups of Bisquick
2 eggs
1/3 cup of dried milk
1 cup of water (and have about a cup more in case you need it)
1 teaspoon of vanilla or cinnamon extract
1 tsp of cinnamon
1/8 tsp of mixture of ground cloves, ginger, mace (according to taste, this could be up to 1/4 teaspoon, but increase the amount slowly!)
1/4 cup of sugar
powdered sugar to dust pancakes with, only if desired
